Pasta Primavera

If you’re craving something fresh, colourful, and full of feel good flavour, this Pasta Primavera is just the thing. It’s packed with vibrant veggies, tossed in a rich, comforting sauce, and finished with plenty of melty parmesan and a squeeze of lemon for that perfect fresh kick. It’s simple, wholesome, and comes together easily, making it ideal for a cosy weeknight dinner or when you want something satisfying without feeling too heavy. Loads of flavour, plenty of goodness, and seriously comforting let’s get cooking!

Turn cooking mode on

Step 1

Add the oil to a pot and bring to a medium heat.

2 tbsp Oil

Step 2

Add in the carrots and broccoli and cook for 3-4 minutes.

Add the pasta to boiling salted water and cook to the packet's instructions.

300 g Pasta

Step 4

Add in the courgette and peppers and cook for a few more minutes and then add in the garlic.

Continue to cook until the vegetables start softening.

Step 6

Sprinkle in the basil and coat.

1 tsp Dried Basil

Pour in the chopped tomatoes and combine and then pour in the stock and add the butter, stir and simmer for a few minutes.

250 ml Vegetable stock

2 tbsp Butter

Step 8

Drain the cooked pasta and add to the pot and then add in the parmesan and lemon and stir until the cheese has melted.

50 g Parmesan cheese

1/2 Lemon juice

Serve with some salt and pepper (to taste) and a little parmesan on top. Enjoy!

Kids absolutely loved this although I did have to blend the veggies in to the sauce to hide them added shredded chicken into it for protein

This was pretty tasty. At first I kinda thought it was missing somethjng but I couldn't figure it out. But the more I ate it the more I thoufht actually, no, this is pretty good just as it is. My 1 yr old ate 2 and a half bowls of this 🤣🤣🤣🤣
