Yummy! Makes a nice change to have the diced chicken rather than mince. I decided to do this in the slow cooker so that it was ready for when we got home and topped it with cheese as our household are cheese mad!x

I used leftover chicken thighs and had everything in the cupboard, so it was a quick, easy meal. We don't like black beans, so we didn't include this. All the 6 adults grabbed theirs before I could take a pic, so it's a child's portion on the photo.
