Turn cooking mode on
Step 1
Add the rice to a rice cooker or to a pot of water and cook to the packets instructions.
1 cup Rice
Step 2
Get 2 separate bowls, in one mix together the plain flour and cornflour and in the other whisk the egg.
2 tbsp Plain flour
1 tbsp Cornflour
1 Egg
Step 3
Coat each piece of chicken, firstly in the egg and then in the flour until completely coated.
2 Chicken breasts
Step 4
In a pan add the oil and bring to a high heat.
50 ml Oil
Step 5
Make sure the oil is piping hot and then add the chicken as spaced out as possible and allow to fry for a few minutes until one side is crispy and then flip.
Step 6
Cook until completely cooked through. (the internal temp of chicken should be no less than 76C).
Step 7
Remove the chicken from the pan and set aside and then mop up the excess oil with kitchen towel.
Step 8
In the same pan add the sweet chilli sauce, soy sauce, apple cider vinegar and the garlic granules and combine, allow to cook on a low heat until sticky and glossy, this should only take a few minutes.
4 tbsp Sweet chilli sauce
1 1/2 tbsp Soy sauce
1 tbsp Apple cider vinegar
1 tsp Garlic granules
Step 9
Add back in the chicken and coat.
Step 10
Serve with the rice, sliced cucumber and coleslaw then garnish with spring onion and thats it! Enjoy.

The chicken was beautiful and I loved the taste of the sauce but it was too hot for me. With the right chilli sauce it would be awesome

I understand, the heat can sneak up on you! Maybe try using a milder sweet chilli sauce for your next go. Bet it'll be fab that way too. xx

Soooo tasty! I used stir fry sweet chilli sachet from Tesco and found it to be quite spicy and too much garlic granules used, to help with the spice and overpowering garlic I added some runny honey and left the chicken to cool and it was perfect! Thank you!
