I personally wouldn't use cornflour, You can sub for plain flour and then add an extra 2tsp of baking powder x

You can get some lovely gf flours in the shops in Freeform section asda & freee are the best I found for my daughter or use chickpea flour, rice flour or turn gf rolled oats into oat flour if you can tolerate oats.
